Recipe for Summer Salad with Turkey, Noodles and Pineapple

This recipe is an old one, but a favourite still. I found it in one of those little books you pick up at the grocery check outyears and years ago. I’ve since lost the book, so this is from memory and quantities are approximate…. but you really can’t make a mistake anywhere 😀

Salad ingredients

  •  2 cups cold cubed turkey
  • 3 cups cooked pasta… any shape you like….. I used bow ties today
  • 4 chopped green onions
  • 2 chopped celery stalks
  • 1 cup pineapple chunks (reserve 2 tablespoons of juice)
  • 1 can mandarin oranges (drained)
  • A couple handfuls of walnut halves

Dressing

  • 1 cup  or so Mayonnaise
  • 1/2 cup or so sour cream
  • 2 tablespoons of pineapple juice
  • Salt and pepper

Toss it all together. Serve very cold on a very hot day and everyone will love you!

I think you could even leave out the turkey and your vegetarian friends would be happy too🍴
